This desert started as a seasonal curiosity in the café but became so beloved by our guests that it absolutely deserved a permanent spot іn our collection.

True to a real Basque cheesecake, it has its signature “burnt” crust, which is why this type of cheesecake is also called “burnt cheesecake”. This crust indicates that the dessert is prepared perfectly. And, of course, it`s got unbelievably delicate creamy texture. To achieve it we use the freshest natural ingredients of the highest quality, but the most important is the expertise of a pastry chef, who knows all the little secrets of preparation. One such secret is time: baked for only 19 minutes and then cooled for no less than 15 hours.
