Artisanal Basque cheesecake with Kyiv Vibe. Classic Spanish recipe enriched with very Ukrainian notes of poppy seeds and cherries. It’s simple, elegant, yet full of distinct character.

This dessert was born right in the heart of the city, in our cafe, drawing inspiration from the unique spirit of Kyiv, which always seeks to surprise, boldly experiment, and try something new while never losing its own essence.

Basque cheesecake, also known as “burnt cheesecake” owes its name to the pronounced “burnt” crust, which indicates that the dessert is made perfectly. It`s made from the freshest natural ingredients of the highest quality, entirely handmade and homemade. The craft look of the cheesecake, very rustic and without any decorations, perfectly emphasizes the essence of the dessert.

This cheesecake consists of only a few very simple ingredients but requires true mastery and many little secrets to achieve the perfect flavor and exceptionally creamy texture. One of our secrets is time. We bake it for only 19 minutes, but we cool it for no less than 15 hours.

Ingredients: Italian cream cheese, eggs, cream, poppy seed filling (poppy seeds, sugar, glucose-fructose syrup, starch), cherries, corn starch, sugar, vanilla sugar.

This is a vegetarian cheesecake, it does not contain gelatine, margarine and rennet
